Chicken Ratatouille | One Pot WonderFULL
This one pot chicken ratatouille recipe will tantalize your taste buds and satisfy your soul, all while doing wonders for your waistline! This easy dinner is packed with super healthy, super foods that are guaranteed to help speed up your metabolism! And it couldn’t be any easier to make! All you need is a large skillet, but preferably (my FAVORITE cooking vessel EVER), a cast iron skillet!
The chicken ratatouille recipe below is how my family likes it, but you can always omit or add any ingredients accordingly. For example, some people like to add some fresh, juicy tomatoes. Some don’t like the spice, so they omit the red pepper flakes. Whatever floats your boat!
Shopping list for this simple chicken ratatouille recipe:
- Chicken Breast
- MED Zucchini
- MED Yellow Squash
- Eggplant
- MED Yellow Onion
- Minced Garlic
- Fresh Basil Leaves
- Marinara Sauce
- Red Pepper Flakes or to taste
- Italian Seasoning
- Black Pepper or to taste
- Kosher Salt or to taste
- Shredded Mozzarella Cheese
- Olive Oil
How to make this one pot chicken ratatouille:
- Preheat oven to 350F.
- Season chicken breast with a pinch of black pepper and Kosher salt.
- Sear chicken breast in olive oil over medium-high heat.
- While searing chicken, slice all vegetables.
- When chicken is almost done, add onion and garlic. Cook till onions are translucent and garlic is fragrant.
- Turn off stove.
- Add yellow squash, zucchini, and eggplant in a rotating pattern around the chicken breast.
- Top with fresh basil.
- Sprinkle with red pepper flakes, Italian seasoning, and the rest of the salt and pepper.
- Pour marinara over everything, drizzle with olive oil and spread with a spatula.
- Cover pan with aluminum foil.
- Cook in preheated oven for 20 minutes.
- Remove from oven and set oven to broil.
- Remove aluminum foil and sprinkle with mozzarella cheese.
- Broil until browned (about 5 minutes).
- Serve and enjoy!
