Ingredients needed for gluten free coconut oatmeal cookies:
- 2 c King Arthur’s Gluten Free Flour
- 1 tsp Baking Soda
- 1 tsp Baking Powder
- 1 tsp Salt
- 1/2 c Shortening
- 1/2 c Margarine
- 1 c Granulated Sugar
- 1 c Light Brown Sugar packed
- 2 LG Eggs
- 2 tsp Vanilla Extract
- 1 c Rolled Oats
- 2 c Shredded Coconut

- Baking Soda
- Baking Powder
- Salt
- Shortening
- Margarine
- Granulated Sugar
- Light Brown Sugar packed
- Eggs
- Vanilla Extract
- Rolled Oats
- Shredded Coconut
How to make insane, gluten free coconut oatmeal cookies:
- Preheat oven to 375.
- Sift the first four ingredients together and set aside.
- Cream margarine and shortening in stand mixer with whisk attachment.
- Slowly add sugar and cream until fluffy.
- Add eggs and vanilla. Mix well.
- Mix in flour mixture in four parts.
- Beat until smooth.
- Fold in oatmeal and coconut.
- Drop 2oz cookies onto parchment lined/ non-stick sprayed baking sheet.
- Bake for 10 minutes.
- Leave to rest on baking sheet for 5 minutes before transferring to cooling rack.
- Store in an air tight container.
**If not gluten intolerant, all purpose flour may also be used.
**Other gluten-free flour options that also work well in this recipe include: coconut flour, almond flour and oat flour (make sure to make any recommended adjustments to recipe depending on flour choice).

these cookies look so so yummmm… and while I have not tried baking with regular gluten free flour, I have used almond flour before and loved it… will definitely try this recipe out (or let my teenager bake – she is the better baker anyways!!)
