Quick and Easy Irish Soda Bread Muffins
These quick and easy Irish soda bread muffins are one of my favorite additions to any meal! Also, they have recently become one of my go-to breakfast choices. As a mom, I am always trying to find quick and easy to make breakfasts that I can take with me anywhere! That is why I started making my Irish soda bread muffins! They are so easy to make that even my toddler knows the steps to baking them!
Irish soda bread has been around since around the 1830s.
During this time, in Ireland, there was a financial strife and ingredients to cook with were hard to come by. So as an alternative to yeast, the Irish started making bread with baking soda. Hence, the creation of Irish soda bread.
Irish soda bread can be served warm or at room temperature. I usually make them ahead of time and then simply store them in the pantry and grab one every morning with a pad of butter or a swipe of marmalade! Yum! But you can top it with just about anything you want! These are some of my favorites:
**Another fun idea is to make French toast with soda bread! The sweet bursts of warm raisins drenched in syrup is irresistible!
You don’t need much to make these super easy Irish bread muffins!
All you need is:
- a muffin tin
- pastry cutter
- mixing bowls
- measuring cups/spoons
- whisk
- flour
- sugar
- caraway seeds
- baking powder
- salt
- baking soda (of course!)
- buttermilk
- an egg
- butter
- raisins

Easy Irish Soda Bread Muffins
Equipment
- muffin tin
- pastry cutter
- large mixing bowl
- whisk
Ingredients
- 2 c all purpose flour
- 3 tbsp sugar
- 1 tbsp caraway seeds
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1 c buttermilk
- 1 LG egg
- 1/4 c cold butter
- 3/4 c raisins
Instructions
- Preheat oven to 375F.
- Mix first six ingredients in a large mixing bowl.
- Using a pastry cutter, cut butter into mixture until it becomes a crumble.
- In a separate bowl, whisk buttermilk and egg together.
- Slowly stir into the crumb mixture.
- Mix in the raisins.
- Spoon evenly into a greased muffin tin.
- Bake for 20 min.
- Serve warm or allow to cool and store in an air tight container.
