No Bake Pumpkin Cookies
These no bake pumpkin cookies are super easy to make with only 7 ingredients! Unbelievably low fat, low sugar and gluten free! I have so many friends that are gluten free and I love to cook for them but finding gluten free recipes that actually taste good too can be difficult! This is one of those diamond in the rough recipes! A must keep for everyone that is gluten intolerant! Heck, a must keep for anyone that loves the flavor of fall and delicious cookies!
With only 7 ingredients and NO BAKING needed, this is one of the EASIEST recipes out there! My toddlers LOVE to help me make these yummy mouthfuls of fall flavor! Even if they accidentally pour a little too much of one thing into the mix they still seem to somehow turn out amazing!

What you need for these super easy pumpkin cookies:
EQUIPMENT
INGREDIENTS
- 2/3 c Pumpkin puree
- 1/2 c Butter
- 1.5 c Light brown sugar lightly packed
- 1/2 c Baking chips sea salt caramel, butterscotch, or white chocolate sea salt caramel, butterscotch, or white chocolate
- 1 tsp Pumpkin spice
- 1 tsp Ground cinnamon
- 4 c Quick oats

Pumpkin puree
Butter
Light brown sugar
Baking chips (sea salt caramel, butterscotch, or white chocolate)
Pumpkin spice
Ground cinnamon

How to make No Bake Pumpkin Cookies:
- Prepare a sheet tray with Parchment paper and set aside.
- Using a paper towel, squeeze extra moisture out of pumpkin puree.
- Add all ingredients EXCEPT the oats to a large sauce pot.
- Heat mixture over medium heat until simmering.
- Simmer for 7 minutes, stirring frequently.
- Remove from heat and add oats.
- Mix well.
- Drop cookies in heaping tablespoons onto the lined baking sheet.
- Chill in refrigerator for 30 minutes or until set.

- Can I use flavored oatmeal? YES! To cut corners sometimes I use packets of apple cinnamon, brown sugar, or cinnamon flavored oats!
- Can I add anything for even more fall flavor? YES! Sometimes I like to add a tsp of vanilla or a tbsp of maple syrup!
- How can I make them more festive for fall? Sometimes I like to add fall sprinkles when I add the oats! Or I shape them like pumpkins and use some green icing to add a stem once chilled!
