Toddler Truffles | Easy Peanut Butter Truffle Recipe
If you have been a follower of Struggle Shuttle, then you already know that I have a picky toddler! If it’s not fries, candy or cake she probably won’t eat it. She loves her sweets! For example, she was perplexed the last time we were at the pediatrician as to why there wasn’t candy on the food pyramid! If you have my article, Nutrition for Kids | 5 Nutrition Sneaking Hacks then you know that I am always looking for ways to sneak nutrition into my daughters’ diet! I recently came up with this peanut butter truffle recipe that is packed with protein, fiber, vitamins and minerals! My daughter loves them and I love how good they are for her! I just have to control myself from eating them all first!
For this easy peanut butter truffle recipe all you need is:
- Creamy Peanut Butter
- Flaxseed
- Carnation Instant Breakfast powder
- Vanilla Wafers
- Rice Krispies (or favorite cereal)

I came up with this peanut butter truffle recipe by choosing things that my toddler already loves!
Peanut butter, especially peanut butter cookies are a staple at our house. It’s such an easy way to add some calories and nutrition to a toddler diet. I use the easy, three ingredient recipe of 1 egg, 1 cup sugar, 1 cup peanut butter. However, I swap the egg out for flaxseed and water.
My daughter could live on chocolate milk alone. She is close to 3 year old and still drinking whole milk because she is only 27 lbs. However, we started making her “choc” with Carnation Instant Breakfast powder instead of the chocolate syrup so that we can add in a little more nutrition as it is packed with vitamins!
This peanut butter truffle recipe is also SUPER EASY!
My toddler loves to make these with me! If you read my post, Toddler Things | 10 Reasons Why Cooking Should Be One of Them, one of the ten reasons is because cooking is a sensory activity. This recipe is an awesome sensory activity! You get to:
- Crush the vanilla wafers making them into a sand texture. (You can also count (which math skills is another reason to cook with toddlers) the cookies together as you will need about 14 cookies for this recipe.)
- Mixing together the sticky peanut butter and powdery wafers, carnation, and flaxseed.
- Rolling the mixture into balls.
- Rolling the balls in cereal to coat.
Toddler Truffles
Equipment
- Bowl
- Food Processor (optional)
- Rolling Pin (optional)
Ingredients
- 1 c Creamy Peanut Butter
- 1/2 c Vanilla Wafers (about 14 cookies) crushed
- 2 tbsp Ground Flaxseed
- 1/3 c Carnation Breakfast powder may substitute cocoa powder
- 1 c Rice Krispies may substitute favorite cereal
Instructions
- Crush the vanilla wafers into crumbs/powder by either using a food processor or placing in a Ziploc bag and smashing with a rolling pin.
- Mix first four ingredients in a bowl.
- Add cereal to a second bowl. (If using a cereal with large pieces crush it first)
- Make 30 balls out of the mixture.
- Roll balls in cereal.
- Place truffles in refrigerator for 30 minutes before eating.
- Store in air tight container in fridge.
If you are looking for substitutes in this recipe you can try:
- Cocoa powder or peanut butter powder instead of Carnation Breakfast.
- Chocolate wafers, sugar free wafers, gluten free wafers, Oreo cookies without the filling, or Graham crackers instead of the traditional vanilla wafers.
- Replacing half of the peanut butter with Nutella or Greek yogurt.
