Corned Beef Casserole
This super easy corned beef casserole is sure to be a family favorite! All you have to do is whip it together and then throw it in the oven! It’s a mom’s dream dinner to make and a kid’s favorite dinner to eat! With salty corned beef, creamy soup, gooey cheese and crunchy potato chips, what’s not to love?
This recipe called for canned corned beef, but that is just to make it easier on you! You can absolutely use shredded corned beef for this casserole recipe! This is all that you will need for this corned beef casserole:
- Campbell’s Cream of Mushroom Soup
- Campbell’s Golden Mushroom Soup
- Condensed Milk
- Elbow Macaroni
- Potato Chips
- Sharp Cheddar Cheese
Obviously, you can use another brand of soup for this recipe. However, I find that Campbell’s is the most consistent as far as canned, condensed soups go.
You can also use a different shape of pasta if you so desire. Trust me, as a mom myself, I totally understand if your kids will only eat a certain shape of pasta! However, be conscious of cooking time. You may need to adjust the cooking time depending on the shape of pasta you choose. To do this, compare the instructions on the pasta boxes. If the pasta you choose takes more time to cook then add baking time. If it takes less, then take off some baking time. For fool proof cooking, though, simply check the pasta in the casserole as you are cooking it to monitor doneness.
Chip amount, texture and even flavor is up to you for this recipe too! I prefer plain flavored Ruffle potato chips because they seem to give the most crunch and texture differential, but it is up to you and what you like! Please let me know if you play around with different chips for this casserole recipe!
Also, if you don’t want to add the chips to the top, that is okay too! You can just leave them off!

- 10.5oz can Campbell’s Cream of Mushroom Soup
- 10.5oz can Campbell’s Golden Mushroom Soup
- 14oz can Condensed Milk
- 12oz can Corned Beef
- Elbow Macaroni
- Small Bag of Potato Chips
- 8oz Grated Sharp Cheddar Cheese
Instructions:
- Preheat over to 350F.
- Grease baking dish and set aside.
- First, mix the Cream of Mushroom and Golden Mushroom soups together until smooth.
- Add the next four ingredients and mix until combined.
- Put mixture in pan.
- Sprinkle cheese on top of mixture.
- Crush and sprinkle chips on top of cheese.
- Bake in preheated over, uncovered for 1 hour.
- Removed from oven and serve hot!

- 10.5oz can Campbell's Cream of Mushroom Soup

- 2 c water
- 14oz can Condensed Milk
- 12oz can Corned Beef **Break up or shred. Use more if desired.
- 3 c Elbow Macaroni **Uncooked.
- 1 c Potato Chips **Crushed. Use more if desired.
- 8 oz Grated Sharp Cheddar Cheese **Use more if desired.
